  • 2 tbsp neutral oil (e.g., sunflower oil)
  • 1 tsp salt
  • 1 tsp paprika (smoked or mild)
  • ½ tsp turmeric or curry powder (optional)
  • 500 ml water (as needed)
  • Optional: 1 tsp vegetable broth powder

Instructions:

  1. Soak beans: Soak the beans overnight (or for about 2–3 hours in hot water). Then rinse and drain well.
  2. Peel beans (if needed): If using unpeeled beans, mix them in water using a blender or your hands to loosen the skins.
  3. Blend: Blend the beans with bell pepper, onion, garlic, and water until you get a smooth, thick paste.
  4. Season: Stir in salt, oil, spices, and broth (if using).
  5. Steam: Pour the mixture into heatproof molds or banana leaves and steam for about 45–60 minutes.

Vegetarian Version: Moi Moi with Egg

For the classic version with egg, simply place half a boiled egg into each mold and cover it with the bean mixture. This creates the beloved surprise center inside the pudding.
